Restaurant domæne in Herning has once again been awarded one Michelin star. This means the restaurant maintains its place among the gastronomic elite for the fourth consecutive year - an achievement that requires far more than simply operating at a high level.

A Michelin Star is never taken for granted

Maintaining a Michelin star requires consistency, precision, and an uncompromising dedication to craftsmanship, service, and the overall guest experience. It is a recognition reserved only for restaurants that succeed in delivering at an exceptionally high level - every single day.

For the team behind domæne, this year’s Michelin star is therefore both a tremendous victory, an important vote of confidence, and proof that the restaurant continues to evolve and refine the experience year after year.

Behind this recognition lie countless hours of preparation, development, refinement, and a team that works closely together every day to create something truly special for its guests. At the same time, this fourth Michelin star sends a strong signal that world-class gastronomy can thrive outside the largest cities - in the heart of the Central Jutland heathland, beneath the dome in Gødstrup.

This year, the Michelin Guide Ceremony Nordic Countries was held at Tivoli in Copenhagen, where restaurants from across the Nordic region gathered to celebrate gastronomy, craftsmanship, and the people who help elevate the industry every day.

Amid this community, the team behind domæne was once again able to accept its Michelin star - this time for the fourth year in a row. And that is precisely what makes the recognition so special.

An experience built on people, flavour, and presence

For domæne, gastronomy is not only about what is served on the plate. It is about the atmosphere in the room. The aroma from the grill in the kitchen. The precision of the service. The wines in the glass. The sense of calm, presence, and the synergy that emerges when a small team works closely together towards the same goal.

The restaurant’s Head Chef, Jens Vincent, describes domæne as a place without fixed dogmas - but with an uncompromising focus on creating the best possible experience:

“Everything is dynamic, and everything is always open to interpretation. We also never change anything until we have something better. The goal is always to create the best possible tasting menu,” he explains, adding: “The fact that we now stand here with a Michelin star for the fourth consecutive year means a great deal to us. It is an enormous recognition, and we must not take it for granted. It reminds us that we must stay true to our original vision: everything can always be improved. We’re not heading home - we’re moving forward!”

The kitchen at domæne is rooted in classical techniques and minimalist aesthetics, allowing the ingredients to take centre stage.

“I don’t know why, but I’m a great admirer of minimalism when it comes to visual presentation. I like it when a plate is beautifully presented yet characterised by clean and clear lines. At the same time, I enjoy complex flavours and balance in the dining experience. It always puts positive pressure on us during development, and it is never easy because I am so demanding and self-critical.”

Fish, seafood, herbs, and the changing seasons play a particularly important role in the restaurant’s culinary expression - always with a focus on balance, precision, and sensory experience rather than noise and effects.

A collective effort

At domæne, the Michelin star is not viewed as an individual achievement but as the result of a strong collaboration between the kitchen, front-of-house team, and everyone connected to the restaurant.

Restaurant Manager and Sommelier Joakim Thomassen highlight the close cooperation and culture that have been built over the years:

“We are a small team, and that makes the work extremely personal. The way we work together, support each other, and welcome our guests means everything. You can feel it in the restaurant when people thrive and make an effort together. That is why it means so much to receive a Michelin star for the fourth consecutive year. It is a recognition of the entire house and of the culture and community we have built together.”

He also emphasises that the gastronomic experience at domæne extends far beyond the food itself:

"Wine, service, atmosphere, and genuine hospitality are just as important to the experience as what is on the plate. We constantly strive to create a complete experience where guests feel calm, confidence, and personality from the moment they walk through the door.”

Four years with a Michelin Star
