23-year-old Toke Fiedler Terkildsen wins Chaîne des Rôtisseurs Jeunes Sommeliers Competition 2025

The Michelin-starred Restaurant domæne can now boast of having a world champion on its team. 23-year-old sommelier Toke Fiedler Terkildsen has won the Chaîne des Rôtisseurs Jeunes Sommeliers Competition 2025, held in Switzerland. It is the first time a Dane has both reached the final and won the competition.

Often referred to as the world championship for young sommeliers under 28, the competition consists of blind tastings, theory, and a stage final where participants are tested in everything from wine identification to food-and-wine pairing and service under extreme pressure. As the second-youngest competitor, Toke impressed the judges by winning the overall competition and also received the award for best participant under 25.

"It felt like a math problem with wine – everything had to be second nature. I had practiced every single day since May, but I was still both surprised and proud to reach the final and then win," says Toke.

Silver at the Danish Championship paves the way to the Nordic Championship

The week before, Toke had already demonstrated his talent at the Danish Sommelier Championship 2025, held at Restaurant AOC and Moltkes Palæ in Copenhagen. There, he won silver in his very first competition, thereby qualifying for the Nordic Championship, which will take place on September 27–28, 2025.

From wine interest to world-class in four years

Toke began taking an interest in wine at the age of 19. In just four years, he has reached the international top level, completing his Sommelier education at the Wine Academy (January 2024) and Certified Sommelier with the Court of Master Sommeliers (August 2024).

Since September 2023, he has been part of the Michelin-starred Restaurant domæne, where he has had the optimal setting for training and sparring - especially from head sommelier Joakim Thomassen.

"We are incredibly proud of Toke’s achievements and delighted to have him on the team at Restaurant domæne," says Joakim Thomassen. "He has a rare combination of talent, discipline, and passion. It is a pleasure to follow his journey – and we look forward to seeing how far he can go."

About the competitions

  • Chaîne des Rôtisseurs Jeunes Sommeliers Competition brings together the world’s best young sommeliers under 28. One can only participate once. This year, 3 out of 17 participants advanced to the final in Switzerland.
  • The Danish Sommelier Championship is organized by the Danish Sommelier Association. This year, 13 competed in the semifinals, with three advancing to the final. The two best qualify for the Nordic Championship.

Another victory to add to the list

In recent years, Restaurant domæne has established itself as a strong player in Danish gastronomy. This year, the restaurant once again retained its Michelin star, and in addition to Toke’s international triumph, domæne can also celebrate that Sophia Rosa Antorini earlier this year won both Chef of the Year and The Potato Prize. With these results, domæne adds even more recognition to its growing list of awards, further underscoring the restaurant’s position at the top of Danish gastronomy.
